With Memorial Day weekend behind us now and summer ahead I wanted to share this simple and tasty salad recipe! It’s made with my one of my favorite sides…Couscous. It’s my favorite because you can make Couscous in about 5 minutes flat! It’s a great last minute side and tastes just as delicious cold as it does warm! I tend to go with a cold salad for a summer BBQ side. Give it a try and let me know what you think. Enjoy!
WHAT YOU WILL NEED:
Two boxes of Couscous (1 box Garlic & Olive Oil, 1 box Parmesan)
One bunch of asparagus
One small container of mixed cherry tomatoes (red & yellow)
Follow box directions for couscous (usually mix packet seasoning with 2 tbsp. olive oil, bring to a boil and add rice)
Side aside and let cool (I leave mine out until it stops steaming and then pop it in the fridge to speed up the process!)
Prep asparagus by washing and trimming the ends
Add 2 tbsp. of olive oil to a skillet and pan sear the asparagus until there now longer raw, but still a bit crunchy. Do not let them get soft!
Allow asparagus to cool and quarter them into pieces.
Dice tomatoes into halves.
Once your couscous has cooled you can toss it with the asparagus and tomatoes. No need for dressing as the couscous has such a fresh flavor and will moisten the salad. Mix, chill, and serve in your favorite bowl!
