Tomatoes, tomatoes, tomatoes.

imageI am obsessed with local produce this time of year and I love these plum and cherry variety of tomatoes. I have been tossing them in balsamic dressing and a¬†little olive oil. I add fresh mozzarella cheese and chopped basil for that amazing flavor. This is my new “go-to” dish for an appetizer, to bring to a summer cookout, or to just eat for lunch. Sometimes the simplest meals are the tastiest!


Quick prep:

2 cups local tomatoes

1 large mozzarella ball sliced

1 bunch of basil chopped

1 tablespoon olive oil

4 tablespoons balsamic vinegar
